I write alot about tequila because Herradura Tequila keeps flying me around the country to do interactive cooking events using their wonderful tequila in our food and drinks. My recent voyage is one I won’t forget easily due to the fact it was at the wonderful Thala resort up in Far North Queensland, a certifiied eco resort in the jungle where the Robinson Crusoe in you comes to life. Hammocks on the beach, cocktail beach shack and delicious food and staff to remind you what life should be like.
I had two days there entertaining the best of the best bartenders in Australia doing cooking events as well and trying to keep them from drinking all three cases of tequila that was sent up for the events. Oh well that didn’t work but they sure had fun and I was thrown back to an early era in my life of what it was like to be 26 once again. I think I’ll stay where I am now thank you very much!
My favourite part of this adventure was our delicious Mexican BBQ down on the beach where I produced some beautiful food for the bartenders. The Baja Fish Tacos were a hit as well as the Achiote BBQ Chicken. Both recipes just said Mexico, colour, fresh, spicy and embraced the use of tequila with our Pineapple, Citrus Tequila Salsa. Tangy Tequila Citrus Salsa
1 ripe pineapple, peeled cored
2 limes peeled and sectioned
2 oranges, peeled and sectioned
2 tbsp coriander, chopped
1 tbsp sugar
¼ tsp salt
½ tsp cayenne chilli powder
2 tbsp tequila
1. Cut pineapple, oranges, limes into ¼ inch dice. Combine with the remaining ingredients in a mixing bowl and refrigerate.
2. Serve with pork or highly flavoured fish such as mackerel.
