Asian “Wow!” - February 25
Expand your repertoire with these dishes with "wow!". Learn basic principles of using the wok and whole spices - black mustard seeds, urud dhal and curry leaves. From refreshing drinks to stir fry from China, and from India flavoursome lemon rice and sabji - mixed vegetables in exotic spices with tomato kasundi.
Green, Fresh and Flash - March 4
You'll be awed by yummy surprisingly low carb, low GI load recipes that are sure to impress. Think raw beetroot salad with cashew mayonnaise, wilted kale with 'creamy' chipotle dressing, cauliflower rice, grilled haloumi with baba ghanoush and pomegranate dressing, and Greek watermelon salad.
Indian Feast- March 11
The class starts with an innovative introduction to samosas. Then, from one of the most complex culinary traditions, discover the intensity and intricate balance of Indian cooking through one of her most festive dishes - vegetable briyani served with cucumber raita, eggplant masalah, and lush, creamy saag (spinach).
World Street Food – March 18
Combine spices and ingredients to re-create authentic mind-blowing street foods from around the world - Mexican quesadillas, Middle Eastern haloumi skewers with honey, Italian crispy kale chips, plus ditalini pasta with romanesco broccoli, white beans and pecorino, and Indian curried sweet potato pancakes.
Easy as Thai – March 25
Learn about the five flavours of Thai cooking, how to use the wok and some impressive knife skills. We make Thai simple using everyday spices and easy preparations of these classic dishes: spring rolls with dipping sauce, pad thai, green mango salad, and massaman curry.
Mexican Fiesta - April 1
Warm your tastebuds with dishes that balance the masterful use of chilli with modern Mexican flavours. Remember chillies are not all hot - you'll be amazed! Learn dishes like fire roasted salsa, blue corn pancakes, Mexican corn, chipotle mayonnaise, jicama salad, black bean chilli and roasted corn salsa.
