Welcome back! It’s a New Year with new things to do, new foods to eat and new places to explore so let’s get going! We are so looking forward to this big new year. I have to say, I love what I do.

We are working on more conference and team building events, including Australia’s first Carbon Neutral and Organic team cooking events, more regional food tours and more cooking classes. I think everyone should know how to cook – “If you know how to cook you’ll never be without a date” that’s what I always say. South Coast Providers, Berry (coming soon)

After staying 3 nights in a Yurt on top of a mountain on the south coast recently, I wandered into Nowra for their regional food and wine expo. It was a pleasure to see some great quality from the area coming to the fore. I so enjoy meeting the farmers and local producers who are so dedicated. Those white peaches, wonderful jams and jellies, and amazing local oysters are heaven!

Of particular note, Carole Ruta from South Coast Providers does some delicious products, with the vast majority of her ingredients sourced from local produce. Word is her store will be opening in Berry soon. If you’re passing by, keep an eye out for it!

Sydney’s “Small Bars”

After much talk, and many delays and twists, Sydney’s “small bars” legislation seems to be having a bit of an impact. It’s finally starting to happen that Sydney is getting a few interesting places where we can go and hang out and have a civilised drink (just like they do in Melbourne!), without having to eat. Avocado Chimichurri

VictorsFood - Avocado ChimichurriI am the professional face of avocados this year. Australian Avocados have engaged me to deliver master classes to chefs all over Australia to inspire them to use avocados more and more creatively in their food.

I am even showing them how to cook with avocado – try it: sauté avocado wedges (quickly) with garlic, rocket and chilli. It’s delicious.

Avocados can be used in many variations, including sweets. Avocado ice cream anyone? Avocado Chimichurri goes beautifully with a barbecued steak, chicken or just about anything. Pictured here on grilled salmon on pea, avocado & mint mash.

Ingredients
1 bunch coriander
½ cup rice or white wine vinegar
1 bunch flat leaf parsley, no stems
1 tbsp (2-3 cloves) garlic, chopped
1 tbsp oregano, fresh
¼ cup lime juice
1 jalapeno chilli, roasted, deseeded
2 avocados, diced
salt and pepper to taste
1/3 cup water
¼ cup olive oil
Method
  1. Roast the jalapeno chilli over an open flame till blackened, then place in a plastic bag to sweat for 5 minutes.
  2. Slice the chilli in half, deseed and remove blackened skin.
  3. In a blender, combine all the ingredients except the oil. While the blender is running, slowly add the oil to thicken. Add a bit more warm water if necessary to thin. Reserve for service.
Makes about 2 cups
